Chocolate Chip Cookies

Recipe From Donna Hay at Donna Hay

Today is Republic Day here in India.I just love to see the parades. The highly synchronised movements are a marvel. But sill I am of the opinion that the money used for these celebration could be better utilised if they were used for the upliftment of the poor. There are huge amounts of money being wasted on celebrations.I agree celebrations do matter. We are rejoicing in our independence. But dosen't everyone require an enjoyment, even the poor.Atleast on this day let us do something for others.

I made these because I had two egg yolks left from my meringue recipe. But according to the opinions I got,
these are really good. The recipe said that I should make it into balls and put in the oven. They didn't flatten,so the second time, I flattened it.Then I used a fork to create decorations on it.

  •  180g unsalted butter, softened
  •  ¾ cup (120g) brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups (300g) plain (all-purpose) flour, sifted
  • 1 teaspoon baking powder, sifted
  • 150g dark chocolate, chopped
Preheat oven to 180ÂșC. Place the butter, sugar and vanilla in the bowl of an electric mixer and beat until pale and creamy. Gradually add the eggs and beat well. Add the flour and baking powder and beat until a smooth dough forms. Fold through the chocolate. Roll 2 tablespoonfuls of the mixture into balls, place on baking trays lined with non-stick baking paper and press to flatten. Bake for 12–15 minutes or until golden. Allow to cool on the trays. Makes 12.
